If I have Guide of Souls and Adeline, Resplendent Cathar in a multiplayer game with three opponents, zero energy. If I attack, is it possible to stack the triggers in such a way that I can use the three energy gained from the three Guide of Souls triggers to immediately boost Adeline with Guide of Souls second ability?

Yes, that works just fine by doing what you outlined: stack the triggers so Adeline's is on the stack last (and resolves first) and then use that Energy gained from the triggers from Guide's first ability to pay for the second when it finally resolves.
